Ingredients

  • 3 very ripe bananas
  • 2 scoops vanilla protein powder
  • 1 1/2 cups oat flour
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/4 cup Greek yogurt
  • 1 tsp baking soda
  • 1 tsp cinnamon

Instructions

  1. 1Mash the bananas and whisk in the eggs, maple syrup and yogurt.
  2. 2Add the oat flour, protein powder, baking soda and cinnamon and stir until just combined.
  3. 3Pour into a lined loaf pan.
  4. 4Bake at 350F for 48-50 minutes until a toothpick comes out clean.

Protein powders absorb differently. If the batter is very thick, add a splash of milk.
