Ingredients
- 2 cups gluten free 1:1 flour
- 1 cup grated zucchini, squeezed dry
- 1 1/2 cups blueberries
- 1/2 cup cane sugar
- 2 large eggs
- 1/2 cup avocado oil
- 1/3 cup milk
- 2 tsp baking powder
Instructions
- 1Whisk the eggs, sugar, oil and milk together.
- 2Fold in the flour and baking powder, then the zucchini and blueberries.
- 3Divide between 12 lined muffin cups and mound the tops.
- 4Bake at 400F for 5 minutes, drop to 350F and bake 17 more minutes.

Squeeze the zucchini hard in a towel or the muffins turn gummy.
