  • 1/2 cup softened butter
  • 2/3 cup cane sugar
  • 1 large egg
  • 2 lemons, zested
  • 1 tbsp lemon juice
  • 1/2 tsp baking soda
  • 1 cup fresh raspberries

Instructions

  1. 1Cream the butter, sugar and lemon zest until fragrant.
  2. 2Beat in the egg and lemon juice, then add the oat flour and baking soda.
  3. 3Gently fold in the raspberries so they do not break apart.
  4. 4Bake at 350F for 12-13 minutes.

Frozen raspberries make the dough wet. Fresh is much better here.
