Ingredients
- 2 cups oat flour
- 1/2 cup softened butter
- 2/3 cup cane sugar
- 1 large egg
- 2 lemons, zested
- 1 tbsp lemon juice
- 1/2 tsp baking soda
- 1 cup fresh raspberries
Instructions
- 1Cream the butter, sugar and lemon zest until fragrant.
- 2Beat in the egg and lemon juice, then add the oat flour and baking soda.
- 3Gently fold in the raspberries so they do not break apart.
- 4Bake at 350F for 12-13 minutes.
Notes
Frozen raspberries make the dough wet. Fresh is much better here.
