Ingredients
- 6 cups blueberries
- 1/4 cup maple syrup
- 2 tbsp cornstarch
- 1 lemon, zested and juiced
- 1 1/2 cups gluten free rolled oats
- 1/2 cup almond flour
- 1/2 cup melted coconut oil
- 1/4 cup brown sugar
Instructions
- 1Toss the blueberries with maple syrup, cornstarch, lemon zest and juice and add to a baking dish.
- 2Mix the oats, almond flour, coconut oil and brown sugar into a clumpy topping.
- 3Scatter the topping over the fruit.
- 4Bake at 350F for 38-40 minutes until bubbling at the edges.
Notes
Frozen blueberries work. Do not thaw, just add 5 minutes to the bake.
