Ingredients

  • 6 cups blueberries
  • 1/4 cup maple syrup
  • 2 tbsp cornstarch
  • 1 lemon, zested and juiced
  • 1 1/2 cups gluten free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup melted coconut oil
  • 1/4 cup brown sugar

Instructions

  1. 1Toss the blueberries with maple syrup, cornstarch, lemon zest and juice and add to a baking dish.
  2. 2Mix the oats, almond flour, coconut oil and brown sugar into a clumpy topping.
  3. 3Scatter the topping over the fruit.
  4. 4Bake at 350F for 38-40 minutes until bubbling at the edges.

Notes

Frozen blueberries work. Do not thaw, just add 5 minutes to the bake.
