Ingredients
- 2 cups gluten free graham cracker crumbs
- 6 tbsp melted butter
- 32 oz cream cheese, room temperature
- 1 1/4 cups cane sugar
- 4 large eggs
- 1 cup sour cream
- 2 tsp vanilla
Instructions
- 1Mix the crumbs and butter, press into a springform pan and bake at 325F for 10 minutes.
- 2Beat the cream cheese and sugar until completely smooth, scraping often.
- 3Add the eggs one at a time on low speed, then the sour cream and vanilla.
- 4Bake in a water bath at 325F for 60-65 minutes until the center barely jiggles.
- 5Cool in the oven with the door cracked, then chill overnight.
