Ingredients

  • 1.5 lbs chicken thighs
  • 1/4 cup olive oil
  • 2 lemons, juiced
  • 1 tbsp oregano
  • 2 cups cooked rice
  • 1 cucumber and 2 tomatoes, diced
  • 1/2 cup kalamata olives
  • 1/2 cup feta

Instructions

  1. 1Marinate the chicken in olive oil, lemon, oregano and garlic for 30 minutes.
  2. 2Sear or grill 8-9 minutes per side until cooked through, then slice.
  3. 3Toss the cucumber, tomato and red onion with olive oil and lemon.
  4. 4Build the bowls with rice, chicken, salad, olives, feta and tzatziki.

Notes

Double the marinade and freeze half with raw chicken for a future dinner.
