Ingredients
- 1.5 lbs chicken thighs
- 1/4 cup olive oil
- 2 lemons, juiced
- 1 tbsp oregano
- 2 cups cooked rice
- 1 cucumber and 2 tomatoes, diced
- 1/2 cup kalamata olives
- 1/2 cup feta
Instructions
- 1Marinate the chicken in olive oil, lemon, oregano and garlic for 30 minutes.
- 2Sear or grill 8-9 minutes per side until cooked through, then slice.
- 3Toss the cucumber, tomato and red onion with olive oil and lemon.
- 4Build the bowls with rice, chicken, salad, olives, feta and tzatziki.

Double the marinade and freeze half with raw chicken for a future dinner.
