Ingredients

  • 1.5 lbs chicken breast, sliced
  • 3 bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp fajita seasoning
  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 avocado
  • Lime and cilantro

Instructions

  1. 1Toss the chicken and vegetables with the fajita seasoning and oil.
  2. 2Roast at 425F for 20 minutes, stirring once.
  3. 3Stir lime juice and cilantro into the warm rice.
  4. 4Build the bowls with rice, beans, fajita chicken and peppers and sliced avocado.
