Ingredients
- 1.5 lbs flank steak
- 1/4 cup lime juice
- 3 cloves garlic
- 1/2 cup chopped cilantro
- 2 cups cooked white rice
- 1 cup corn
- 1 can black beans
- 1 avocado, sliced
Instructions
- 1Marinate the steak in lime juice, garlic, half the cilantro, oil and salt for 30 minutes.
- 2Sear over high heat 4-5 minutes per side for medium rare, then rest 10 minutes.
- 3Fold the remaining cilantro and more lime into the rice.
- 4Slice the steak against the grain and build the bowls with beans, corn and avocado.
