Ingredients

  • 2 lbs chicken breast, cubed
  • 1/3 cup olive oil
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • Salt and pepper

Instructions

  1. 1Marinate the chicken in olive oil, lemon, garlic, oregano, salt and pepper for at least 30 minutes.
  2. 2Thread onto skewers and place on a lined sheet pan.
  3. 3Bake at 425F for 20-22 minutes, flipping once, until charred at the edges.
  4. 4Stir the yogurt with the squeezed grated cucumber, a little garlic and lemon for tzatziki.

Soak wooden skewers in water for 20 minutes so they do not scorch.
